Ok- just acknowledging my extended absence, all these weeks away from blogging really proved how hectic life can get (yes, I should probably schedule posts...)
I think oats are probably the best food ever, oat bread, oat milk, muesli, porridge, cookies- how much more proof do you need? Anyway, it's time to add my own oat creation to the draw. Without further ado I give you;
Banana, Coconut and Oat Pancakes
Ingredients:
-1 1/2 cups oats
-2 cups almond milk (or any milk really)
-1/2 cup coconut
-an egg
-a teaspoon vanilla
-a mashed banana
Method:
Grind the oats up in a blender, bar mix or food processor- you could probably use them whole or just crush them a bit but the more ground they are, the better they absorb liquid.
Add everything else and stir really well. If the mix is dryer than cake batter, add more milk.
Cook on a medium heat pan with oil or butter for 1-2 minutes per side or until you see bubbles piping on the surface!
Serve with maple syrup and strawberries or whatever you like.
